As you all know, consistency with food is not something I have much trouble with. I track every day and am in my calorie range about 98% of the time. The last time I decided to not track for a couple days was in the middle of February--- for my birthday. So, 2 months ago. I think I was due for it.
This past couple weeks was Fiesta here in San Antonio----- a huge party that we hold close to our hearts. We don't typically go and participate in any of the events, but we DO try to do our own thing by making some fantastic Mexican food and watching the 2 big parades on TV.
So, Friday I made chicken and cheese enchiladas and beef fajitas. In fact I made a LOT so that we could have leftovers for Saturday night as well. I made about 3 pounds of fajitas and about 100 enchiladas-- we always have people to share the bounty with, you see. YUMMMM.
So, on Saturday, I did NOT track my day. I went to the Autism walk, had breakfast, 2nd breakfast and then went to the Kind William Fair and had food from booths and then stuffed myself with my the Mexican food I had ready that night! I am glad I did that for myself. Haha.
OH--- and look what Kissytina (Kristina) snapped of me cooking:
