My Eat Clean Challenge--Day #1

I have recently read “The Eat Clean Diet Recharged” and I am beginning the process of adopting the Eat Clean Principles to my diet. The last few weeks I have completely eliminated Diet Coke and have (almost) eliminated all artificial sweeteners. I am now ready to attempt to incorporate the Eat Clean Principles on a day to day basis. I know I will not be 100%, but my goal is to eat as clean as possible for the next 10 days....

Here is today’s menu:

Breakfast:
~Eat Clean Breakfast Parfait (1 banana sliced, 1/3 cup cottage cheese, 1 Tbsp. simply fruit, 1 Tbsp chopped pecans)
~¾ cup skim milk
~Coffee with stevia

Snack:
~½ cup fat free plain Greek yogurt mixed with cardamom, cinnamon and stevia
~Homemade Flax and oat bran zucchini muffin
~Coffee with Stevia and ¼ cup almond milk

Lunch:
~Black Eyed Pea and veggie fritter with horseradish sour cream sauce (Eat Clean Magazine Recipe)
~Brown Rice
~Grapes
~Water with lemon

Snack:
~Pistachios
~Raisins
~Baby carrots
~Water with lemon

Dinner
~Enchiladas (Eat Clean Recipe)
~Broccoli
~Water with lemon

Snack:
~Herbal Fruit Tea with lemon
~small orange
~almonds

****End of Day note****

All in all today went well....I did get hungry only 2 hours after lunch so I ate my snack a bit earlier then I would have liked, but hey, you have to listen to your body, right? I ate all of my pre-planned meals and did not sneak any extras!

I do have a question for anyone that eats clean--on your last "meal" of the day, do you always incorporate protein, or would a piece of fruit and a few nuts be OK?

Foodwise I give myself an A+ today (Hurray for me!) I was an Eat Clean rock Star!

Exercise today was lackluster to say the least. My seasonal allergies have started full force and I have what I think may be achilles tendonitis flaring up in my left foot so I decided to take an unscheduled rest day. I feel pretty guilty about it actually since tomorrow is my scheduled rest day due to an evening meeting and working a 10-hour shift at the dialysis unit. I guess I shouldn't stress over it, but I feel kind guilty just the same....

    I think you had a GREAT day! WOW you really planned and made it happen. I think there should be protein in the evening snack- but that's just my opinion. Don't worry about taking the extra rest day, just like you listened to your body about eating, you have ti listen to it when it needs rest as well. Keep up the amazing work- I know it's challenging.

    No guilt - you do need to listen to your body. I find doing a few sun salutations (yoga) helps stretch me out when I don't feel well.

As far as the Clean Eating I think you did great! I eat clean about 85% of the time. Tonight we had a nice vegetarian dinner. My last snack of the day is usually oatmeal with a small amount of local honey and some chopped walnuts. I find that keeps me full and I don't wake up starving either. Once in a while I'll add a TBS of greek yogurt to the oatmeal.

I'm eating around 1,500-1,700 calories a day. I've been doing CE for over a year and each month we get better and better. I picked four recipes from the latest magazine to try. The Cocoa Spiced Latte is awesome!

    I do the same as fitchick, have a casein shake before bed. I like to have some kind of protein at each meal to make sure my total amount of protein for the day is high enough. Having hardboiled egg whites in the fridge is an easy way to add some protein to a snack. Right now I'm following cooler 1 for the most part, and I've found cutting out dairy is tough, but doable. And I know it's not forever, just 5-10 days at a time. I eat A LOT of eggwhites! lol.

  Looks like you are doing awesome! My night snack is usually a casein shake. Some night's I've been given an apple with almond butter or I have my shake with a banana. I'll be checking in each day. You are off to a great start!

    Great meal choices! I've been considering a vegetarian lifestyle... and at the very least, have decided to eat dairy-free and eat less processed food daily. It's a challenge but I feel like it's worth it!
