It is a beautiful, sun-shiny Saturday here in AR! Such a nice change to have warm, breezy, sunny weather compared to the dreary winter we had.
While browsing for new recipe ideas, I found this one:
CrockPot Pineapple Chicken
So, of course I had to try it!
SO easy & SO good!
Only requires 4 ingredients, dump them all in the crockpot on low for 4-6 hours and VOILA! I tasted it on its own after it finished cooking, but tonight (or tomorrow) I will be having it over a big spinach leaf salad. Oh, and I used a low sodium, lite soy sauce to make it healthier & also added extra red & black pepper. Make sure you buy the pineapple in 100% juice and not syrup. It's better for you & less calories.
My chest is feeling better, so that is very good! I went on a long walk last night with my hubby. I reeeeeeeeeally wanted to go for a run this morning, but I refrained & decided to give myself a few more days to heal before I do anything too strenuous. I'm just SO ready to get back into my exercise routine and get these last few pounds back off before its time to go to Mexico!
