At the beginning of Spring my husband (especially) an myself are busy producing Maple Syrup. We tap the trees in late Feb. to early March. The season runs anywhere form 2 to 5 weeks. It all depends on the weather. It needs to freeze at night and be in the 40's during the day to make the sap run. This year was a great year for us. It takes 40-50 gallons of raw sap to make a gallon of syrup. We ended up with 68 finished gallons. That's a lot of sap to boil into syrup!
It always proves to be a great time for the family and friends.

I remember doing this with my grandfather who lived in the Adarondack's. We use to put the final product over ice cream. It was soooooooooooooooo good. Now I rarely have maple syrup. Thanks for the memories. Enjoy!
