This post could get long, but I've got a lot to get done today, so I'll try to be brief!
My sweet husband took the kids and I to Lake Superior this last weekend. Now I know, it's nuts, going there in the spring, but we'd never been and wanted to see it, so we went. It amounted to a day trip because it's over a 100 miles from here, but it was
We were able to climb over the ice that the lake had sculpted on the beach, and walk out close to the shoreline. It was really neat to see the water tossed by the waves onto the beach; showing the process that created the ice sculptures throughout the winter.
We stopped at a lovely restaurant on the way back and had the place to ourselves. Ordinarily I'd be afraid of that, because as any foodie will tell you, a packed restaurant usually means good fare can be found!
The food was good, although they didn't have much of a vegan selection. I ordered the vegetable and noodle soup, which fortunately wasn't too salty, and had a nice side salad.
All in all it was a relaxing weekend, and keeping me out of the kitchen for a day wasn't bad either! lol
