This was my entire dinner..... all of it...... it was just what i was in the mood for.... BTW, I don't really like fresh tomatoes, except in salsa. These were canned, but I frequently use fresh in the summer.
1 28 ounce can of plum tomatoes - preferably from San Marzano..... juice rinsed off.
1/2 diced red onion
1 TBS olive oil
2 chipotles in adobo sauce
1 TBS taco seasoning
1 or 2 habaneros.... usually 1, chopped fine
2 tsp MINCED garlic
salt and pepper to taste
1/2 can of corn --- optional.... I did NOT add this tonight.
2 - 3 TBS of chopped cilantro
Pulse it all in a blender. Pour it into a strainer to let the juice drain out. Then add the juice of 1, or even 2 limes.
