She has been posting vegan recipes from numerous bloggers. Which is how I discovered Averie’s blog, Love Veggies & Yoga.

A lot of her stuff is gluten-free, which is perfect for me! After searching through all of her recipes I have found so many delicious things to make. But the first thing that appealed to me was her Microwave Banana Oat Cakes.

Although I made my version a bit differently. First I wanted a bit more oats, so I used ¼ cup instead of 3 tbsp. Although next time I’ll be adding more banana, because it was definitely too oaty.
I added the ¼ cup oats, ½ tsp cinnamon and half a mashed banana to a bowl.
I mashed them all together and then transferred them to a lightly sprayed bowl.
I microwaved the mixture for about 95 seconds and then let it cool down for a minute or so to let it firm up.
I think it’s more like a cookie, but it was delicious!! I don’t think it needs any added sweetener, but feel free to add what you like! I decided to top it with Barney Butter and had a small apple and Greek yogurt on the side.
A nice filling breakfast. 350 calories, 50g carbs, 20g protein, 6g fat, 8g fiber.
I like having so many different foods, especially at breakfast. Although if you want a bigger cookie, Averie has another option for you.
