Just starting Day 5. It is getting easier. I am spending more time in the kitchen than I would like to, but am really enjoying all the fresh vegetables. They are worth the effort! My husband has committed to make us fresh V3 juice every morning (our version of V8 juice) while I make eggs, and that is really nice to have his support in that way!
Eggs, eggs everywhere! I am sure this is just for phase 1! I have taken to baking my eggs in a pie plate. It is a lot easier than trying to watch an omlet cook. I whip 3 eggs in a small bowl and add different things every day. Just basil is good sometimes. Sometimes I add veggies and sometimes meat, sometimes sprinkle some cheese on top. Spray a pie plate with cooking spray and put it in a preheated 350 oven for 20 minutes while I get dressed. Comes out perfect every time, and I change up the ingredients enough we haven't gotten tired of it yet. This makes a generous 2-person serving for us, but you could get 4 servings out of it if you had other stuff on your plate (like.... fruit and toast :)
I weighed on Monday, the day I started, and hadn't planned on weighing in again until next Monday, but I just had to peek. Stepped on the wii fit plus this morning and registered a 3 pound weight loss after just 4 days. It took me into a new set of numbers I have not seen in while, so I am very happy with that, and looking forward to Monday's official weigh in! Added bonus - my wii fit age was 30 this morning - not bad for an obese 51-year-old grandma.
I haven't had a perfect day on the Beach yet, but I've had some very good days, and it gets easier each day.
