So it's been 9 days since I went gluten free and started eating healthier overall. It seems to be paying off; I've lost 5 lbs already! Yay me! But I know that it is still new and I will hit some bumps in the road. I am fortunate that my husband is so supportive-he's gamely trying to eat like me (not entirely, but better) so I won't feel alone in this. Having a good support system is so important. Even my boss has decided to eat healthier in support of me (and himself, too, as he is a larger man-don't want him to develop health problems either!).
I think the toughest thing right now is thinking about all the things I can't have anymore-buns on burgers, those yummy garlic cheese biscuits at Red Lobster, cornbread from my favorite BBQ place, etc. But I guess the longer I do this, the less I'll miss them.
I'm still in search of good gluten-free alternatives to certain things that I'm not willing to give up. Pizza is one example. I did buy a gf pizza the other night and it was okay-different, but not terrible. So, I'm okay with that. I also bought some gf tortillas--VILE. I need to find another brand. Heck, I might need to start experimenting and try making my own.
Going out of town this weekend and emailed the restaurant where we'll be having dinner...they were wonderful in their response! They sent me a list of their gf foods and the chef said to let him know when I arrive and he'll come talk to me about what he can do for me. THAT is excellent customer service!
