Menus for Whole Food Challenge

Here it is, my weekly menu plan for the Hogwarts Whole Food Challenge. I have mixed feelings toward whole food challenges. I hate them as they take a lot of work to cook entirely from scratch, and on busy days in the middle of basketball season, with 3 kids on 3 different teams, and people heading off for camp trips, and group projects to do, plus my volunteer colleagues dealing with life issues - things are a little hairy around here. The last thing I want to do right now is cook all whole foods and nothing but whole foods. However, I have been feeling the blahs from the unhealthy things I have been putting in my body, so I know I need this. Besides, my weigh ins are always SPECTACULAR after a whole food challenge, so I don't mind the little 'kickstart' to my weightloss goals!

Monday
breakfast - whole cooked oats and banana
lunch - scrambled eggs with EVOO and spices and fresh fruit
snack **
dinner - roast chicken, frozen veggies, whole potatoes boiled and then fried in EVOO
snack

Tuesday
breakfast - whole cooked oats and banana
lunch - leftover roast chicken and fresh fruit
snack
dinner - whole food casserole (small red beans, ground beef, onions, EVOO)
snack

Wednesday
breakfast - whole cooked oats and banana
lunch - leftover casserole and fresh fruit
snack
dinner - stir fried pork strips with veggies done in EVOO and whole food fried rice
snack

Thursday
breakfast - whole cooked oats and banana
lunch - scrambled eggs with EVOO and spices and fresh fruit
snack
dinner - whole food chicken stew (chicken pieces fried in EVOO with fresh veggies like onions, carrots, celery)
snack

Friday
breakfast - whole cooked oats and banana
lunch - leftover chicken stew
snack
dinner - brown rice and beans
snack

Saturday
breakfast - whole cooked oats and banana
lunch - leftover brown rice and beans
snack
dinner - whole food hamburgers (hamburger meat with spices and egg- no buns for me) with frozen veggies
snack

Sunday
breakfast - whole cooked oats and banana
lunch - scrambled eggs
snack
dinner - fried brown rice, leftover hamburger patties if any
snack

**Note - my meal plan will include snacks daily. I will usually have two snacks per day. One between lunch and dinner, and one after dinner, depending on my hunger levels on this menu plan. The afternoon snacks will usually include fresh fruits or vegetables (whatever I have in the house at the time) and the evening ones will be sweet potato 'fries' (baked sweet potato with EVOO), or EVOO popped popcorn. As I do not know how hungry I will be, however, my snacks will necessarily include a hard boiled egg if I find I am dragging and my energy is low before my next meal.

    I am thinking about trying this here Idea it is a bit like how I eat now. A few more beans on this here list. I find that they surprisingly fill my tummy up!!! emoticon
So Full that I don't even think I can touch a thing. Unlike Salad or fruit which I feel I ate but could fill up some more and unfortunately do sometimes!

    Wow, this sounds almost doable. Thanks for the menu ideas. So, this is where the girls hang out when they are not at Hogwart's! Operation America 2011 but you are in Canada? I would like to join this team to see something other than my home but I just started walking again after a serious motorcycle accident. Walking a mile is a challenge for me. My right leg was smashed. They had to put a bunch of metal in my leg to hold the pieces together.   Hope everyone likes oats and bannanas. Mine would mutiny after eating that each morning. But, I'd love it with berries instead.
Are you cutting out all dairy? Just wondering about starting with not much protein in the morning. But, it all sounds great. I don't have much nonwhole foods, eating gluten free. I wish I had a live-in cook. LOL :)
