Mujadara: Lentils and Veggies

1 Cup Lentils
¼ Cup Cabbage
¼ Cup Red Pepper
¼ Cup Mushrooms
¼ Cup Eggplant
¼ Cup Spinach
1/2 Onions
1 to 1 1/2 Cups Veggie Broth (water)
1 Teaspoon Cumin
1 Teaspoon Salt
1/2 Teaspoon Pepper
1 to 2 Tablespoons oil
Spices

Directions:
Dice the onions into small pieces. Heat the pot on med-high heat. Add 1 to 2 Tablespoon of Oil and 1/2 an onion. Cook until onion is caramelized.

Add lentils, veggie broth (water), salt and pepper. Bring to a boil. Cover, reduce heat and simmer for 20 minutes.

After 10 minutes, add veggies (exept spinach) and 1 Teaspoon Cumin. Cover and simmer for additional 10 minutes. Add spinach at the last minute.

Note:
You can add 1 Cup Rice.

I used cook lentils so I didn’t cook for 20 minutes. I cooked lentils and the veggies for around 10 minute (added the spinach last)

I just used whatever veggies I have.

I used a bunch of spices that I have until I liked the flavor.

    This sound delicious however, you don't mention when you are adding the VEGGIE BROTH! You mention adding water, that's not on the list of ingredients!

Are you using then interchangeably???

    I usually have it with a salad of tomato, raw onion, lemon juice and parsley. Mujadara is great, lots of variations too.
