I have a confession to make

I hate vegetables.

I always have.

I force myself to eat a small serving of green beans, brocolli or peas; but, YUCK!

When I was a kid and I was forced to eat spinach, I told my mom "it makes me yawn." I didn't know the word for gag.

Now here I am at age 42, still hating vegetables, but determined to live a healthy life. That's hard to do as a meatatarian.

So I got online and searched. "Vegetable Recipe" was my search criteria. I found myself at simplyrecipes.com/recipe

and WOW!

Ratatouille, Peperonata, Butternut Squash Apple Cranberry Bake.

These are some wonderful sounding recipes. I can't wait to go to the grocery store today and buy the ingredients to make one of them.

I, Deb Smith, am excited about vegetables!

Who woulda thought it.

    Glad to know I'm not the only one. I have to hide my own vegetables. Chopped very small and mixed with cream cheese spread on a tortilla, mixed in with scrabbled eggs and a really good one is roasted in the same pan as the meat because then the vegetables take on the flavor of the meat instead of themselves. Good Luck!

    I have another awesome solution for you. I bought the cookbooks by Jessica Seinfeld (Deceptively Delicious & Doubly Delicious). Both books are all about hiding vegetables in everyday foods. It totally works, my KIDS and my meatatarian husband don't ever notice. If you hate vegetables, it's totally worth looking into! Good luck :)
