Wow! Tonight for dinner I had 5 oz. of fresh fingerling potatoes with the skins on. They were delightful! Far superior in flavor even than the new red potatoes I usually go for. I rinsed them off, then placed them in a glass bowl so they were standing upright.. like they were giving processed foods the finger.... and microwaved them for just under five minuets till they were fork tender. I cut them up and put one tablespoon of unsalted butter on them, but next time Im going to cut that down to one teaspoon. I think that they are far healthier than russets.. but Id need some facts and figures to back me up on that. I do recall seeing them featured on an episode of Healthy Gormet and they seemed to be highly impressed with these flavor packed guys. And flavor aside.. they are really rich looking! Some are yellow, some are dark purple, others redish in color. They are shaped like crooked fingers.. thus the name I suppose. I encourage you to look them up.. taste them... and write me back.
