First things first: I've always had a rather troubled relationship with salad. It might have to do with the iceberg-with-a-tiny-bit-of-tom
atoes oozing with oil that I've been served at too many restaurants and that passes off as a chef's salad. Bummer! But nowadays, just about any supermarket worth its salt will offer a wide variety of mixed greens. But what shall I put on it? Fat-free dressings have an awful chemical aftertaste, while high-end ones are tasty but also dripping with fat. So, what's a girl to do?
A girl's got to do her homework, that's what! In this case, I had to try and find tasty but fat-free (or at least very low-fat) dressings. Impossible? Not at all! I've found many great recipes. I'll never buy bottled dressing ever again when I can make my own for peanuts and in mere seconds (well, maybe a couple of minutes, 5 tops!). I am now eating salads like a maniac : orange-sesame, Greek-yogourt with dill, balsamic and oregano, you name it! I am even creating my own dressings. I am like the little engine that could, once I'm started, there's no stopping me. And the beauty of ot is: salads fill you up, so you don't overdo it with the main course! So, to your salad bowls my friends, and let's toss one up tonight!
