Good news and good news???

Friday, January 21, 2011

The lab results all came back. I have a thyroid problem- which after the lab results from yesterday was not a surprise.
1. Struggling with a continuing upward line of my weight chart since before I even had the double knee replacement.
2. Struggling with low energy and depression for nearly a year.
3. My normally barely borderline cholesterol shoots up nearly 2-fold.

Vino- my friend and a doctor, has decided that I am going to be his experiment for a couple of weeks. He wants my cholesterol to start coming down and knows that finding cholesterol lowering drugs here in Tanzania is not easy. So he has put me on an ultra low fat diet for the next week. He is hesitant on starting me on a drug regime until he can confirm that diet will not help enough.

It is really a shock to suddenly be on an ultra low fat diet. I sure can use some tips on good tasting salad dressings that do not contain any mayo and the only allowed oil is Olive oil?

You are getting some answers, and that is great! Glad Vino is taking good care of you and cares to do it well and right!!

I don't eat salad dressing usually, but I do have a homemade recipe for an oil and vineger italian that I sweeten with Splenda or Truvia...can you get sugar substitutes there? I will try to find the recipe and get back to you!

Blessing to you...YOU CAN DO THIS!!

Glad the problem has been pinpointed and hoping you can start feeling super better, super soon! I can't get much "speciality" foods here in Brazil. Brazilians love to drizzle olive oil on salads with just a little salt and pepper and a spritz of lemon juice!

Take care,

I'm glad the problem has been pinpointed. Can you get lowfat or fat-free dairy products in Tanzania? I don't use much salad dressing - just salt and pepper and lots of juicy fruits or veggies (tomatoes, pickles, pineapple, mandarin oranges - whatever I'm in the mood for). We get a lot of nice feta cheese here (some reduced fat or fat-free) which often finds its way onto my salad. Or I also use cottage cheese. I find that fat-free yogurt can be used instead of mayonnaise in a lot of recipes. I even use it to mix up packets of ranch dressing.
