Progress Update - January Week 1 and 2

So after my xmas post I was terrified I would find more excuses not to get back on track...but you know what - I didn't! I started up and have been doing great. I've tracked food and fitness everyday since Jan 2, I've gotten all my workouts in - even using my lunch hour at get a workout in if I can't before or after work. Last week and this week are a bit of light workouts in preparation for my half marathon this weekend. After this weekend though full steam ahead!
I've signed up for a warrior dash in April -part run - part obstacle course - total fun! I'm using it as a goal to be totally in shape by...the obstacles will be my hardest thing. You get a viking helmet and a medal at the end...do you get better bling than that?? lol Besides the bf gave me a hard time about not getting myself back into top shape in time and making too many excuses...so now I'm mad and focused and more determined than ever...sometimes a little "I'll show you" attitude is what I need for a kick in the butt!
Things at home are really good. The bf and I have found a balance between his diet needs and mine and have been able to modify our meals to work for us both. he even mentioned training and running a race at St. Patty's day...I'm running the 10 miler...he might run the 5...he's only done a 5K so this could be pretty big for him. I would like to point him towards the 2.5 miler but if someone told me I couldn't do it, I would be irritated, so I'm going to support him wholeheartedly - b/c if he really sets his mind to it - I KNOW he can do it!
My current struggle is a working bfast - currently the bfast sandwich I use is fine but it's expensive and I want to change things up somedays to not always eat prepared, nitrate filled foods...
Here is what I need from my fellow sparkers:
I need "to go" breakfast options...especially hot sandwich like things...
Here is my current bfast:
De-light jimmy dean sandwich(~260 calories) [this is what I'm looking to change]
EAS carbadvatage shake
2% string cheese
Activa light yogurt
silk soymilk (in my coffee)
I want bfast that I can take on the go but here's the issue:
I'm picky - don't like oatmeal, hot cereals, cereal, milk, hard boiled eggs, etc...
I want to be able to make some sort of bfast sandwich ahead of time to heat up in the morning and take along....any idea??? anyone?
