A Spark Thanksgiving

Tuesday, November 30, 2010

I had a great Thanksgiving. It was my three kids and my mom and dad. My Mom is also on Spark so we arranged to have an entire Spark Thanksgiving dinner. I fixed the turkey, and Meg's Roasted Squash Soup for a first course. My mother brought green beans from her garden and fixed Meg's Cranberry relish. Instead of mashed potatoes and gravy and stuffing, I fixed a brown and wild rice pilaf. She fixed gluten free biscuits. We had sparkling cider. For dessert I prepared a crustless sugar free pumpkin pie (I used stevia).

We ate until we were full, but we weren't stuffed. At the end of the evening, I entered my food and still had 200 calories left for the day - on Thanksgiving!

The day after Thanksgiving I got on the scales and lost 2.5 pounds! Lost - on Thanksgiving! It is possible! We never felt deprived at all. We just fixed our foods the healthy way and eliminated foods we knew we would not be able to handle.

Now, to prepare for the Christmas holidays.
