Good Morning!!!!!

Today is gloomy and rainy... which makes me want to cuddle up on the couch and catch up on my DVR... but instead I am at work and sipping on some delicious Pumpkin Spice Coffee!!!

I did not end up exercising last night.... Hubby-to-be decided we should ask my parents if we could borrow their washing machine and dryer for the evening to get some laundry done (I really can't wait for my new house when I will not have to pay per load of laundry!!) ... and I could not pass up the opportunity for FREE LAUNDRY! So I decided to make a nice dinner for my family.... and pack up the car.

Before I get on to last night's dinner recipe... I am a bit stressed. We close on our new house in 2 weeks and I have a bunch of forms and paperwork to collect for the bank. On top of that I need to mail out our Save the Dates by Monday (6 months from the day we will be married!!!) and I still have yet to start hand-writing the envelopes like I wanted to do. I am going to try to start tonight and see how they look. I might have to just print them off the computer if I do not have enough time. On the other hand.... I am in the middle of my semester and I am swamped with school work. Over the next 4 weeks I have 3 research papers, a group presentation, and 2 final exams.

To add even more stress I am so iffy on my job... I like it and I want to stay right where I am. But (as I mentioned a few months back) there is 95% chance that I need to relocate with my job in the coming months. They know I am getting married and have to think about my hubby-to-be too, but I have not told them about us buying a house. I feel like if they know that I am definitely 100% not relocating that they will let me go or discount the work I have been doing. So I do not know what to do.... if I do not tell them and they find out about the house then I don't want them to think the worst of me. But then again.... is it really their business to know I am buying a house?!?! I am just hoping that we can get into the house and then if I do need to relocate or be let go.... I can find another job. Hopefully this will not occur until AFTER THE WEDDING!!!!!!! We really can't afford for my to be unemployed at this point...

Okay... enough of me rambling! I am in a great mood today. I have a lot to get done at work and then I have class tonight so again I have minimal time to exercise.... but I will make sure I do my 100+ crunches and 25+ push-ups for the day!

Now BRING ON THE FOOD!!!!!

Last nights dinner was by far the best recipe I have made in MONTHS! It was so delicious. My father, who does not eat healthy and had never heard of Quinoa before, LOVED IT! He could not stop saying how delicious it was!

I present... Baked Stuffed Quinoa Red Peppers

Ingredients:
1 medium onion, finely chopped (1 cup)
2 Tbs. olive oil
1 Tbs. ground cumin
2 Tbsp. garlic powder
2 15-oz. cans diced tomatoes, drained, liquid reserved
1 15-oz. can black beans, rinsed and drained
1 cup quinoa
3 large carrots, grated (11/2 cups)
11/2 cups grated reduced-fat italian cheese blend, divided
4 large red bell peppers (tops and insides removed)

Directions:
1. Heat oil in saucepan over medium heat. Add onion and carrots, and cook 5 minutes, or until soft. Add cumin and garlic, and sauté 1 minute. Stir in drained tomatoes. Cook 5 minutes, or until most of liquid has evaporated.

2. Stir in black beans, quinoa, 2 cups water. Cover, and bring to a boil. Reduce heat to medium-low, and simmer 20 minutes, or until quinoa is tender.

3. Stir in 1 cup cheese. Season with salt and pepper and basil, if desired.

4. Preheat oven to 350°F. Pour liquid from tomatoes in bottom of baking dish.

4. Fill each bell pepper half with heaping 3/4-cup quinoa mixture, and place in baking dish. Bake for 1 hour.


5.Uncover, and sprinkle each pepper with 1 Tbs. remaining cheese. Bake 15 minutes more, or until tops of stuffed peppers are browned. Let stand 5 minutes. Transfer stuffed peppers to serving plates, and drizzle each with pan juices before serving.

5. Enjoy! Serves 8 (1/2 pepper = 1 serving)

It was so very cold last night... so I made sure my peppers were nice and warm for the voyage to my parents house... I made sure they were all wearing their winter hats!

This recipe is very filling and OH SO DELICIOUS!!! emoticon

Potential Recipe Modifications:
1. Add 1/2 - 1 lb. of Cooked Lean Hamburger to the Quinoa Mixture (for my meat-eating friends out there!)
2. Add 1 Tbsp. of Red Pepper Flakes and 1 Tsp. of Chili Powder for an added spicy taste!

Calories Per Serving w/o Modification: : 378.5
Fat Per Serving w/o Modification: 12.3g
Carbs Per Serving w/o Modification: 40.2g
Protein Per Serving w/o Modification: 23.6g!!!

C'MON.... I DARE YOU TO TRY THIS RECIPE!!!!!!

3 Microwave Pancakes w/ 1 serving of Lite Syrup and 1 Banana

Pumpkin Spice Coffee w/ Milk and Sugar while catching up on Sparks in the office!!! (Sshhh Don't tell my boss!!!!! Haha!!!!)

Mid-Morning Snack:

2 Homemade Hermit Cookies... 1 w/ a bite missing because Hubby-to-be stole it from me this morning and I had to steal it back, but he got one bite in before I grabbed it from him! No one messes w/ my ginger cookies!!!

Lunch:

1 Serving of Baked Quinoa Stuffed Red Peppers from last night's dinner...

Mid-Afternoon Snack:

1 Bartlett Pear

Dinner:

Mixed Berry & Banana Smoothie made w/ Vanilla Almond Milk, Pomegranate Greek Yogurt, and 1/2 serving of Vanilla Protein Powder.... It is going to be delicious!!!

Pre-Bed Snack:

Undecided... but maybe some Hot Apple Cinnamon Herbal Tea w/ Honey!!!

Carbs: 265 g (Over... whoooops!)

Protein: 60g (Yeahhhhh Baby!!!)

...and I was bad this morning.... I peeked at the scale. I think Saturday is going to be a GOOD WEIGH-IN DAY!!!!! I just need to keep this week's progress up for the today and tomorrow!!!!

    The stuffed peppers look yummy. I make a similar recipe and use broth instead of water. It really adds depth. Stuffed peppers are so much fun to make because you can vary the ingredients so much and always end up with a tasty dish. Thanks for sharing!

Don't feel bad about getting on the scale. I'm trying not to get on the scale everyday and it's a tough habit to break!

    If it were my employer (a school) I'd say it's not their business if I buy a house and they'd agree. Any change the bank would be calling your employer to verify any paperwork? I have no idea, just a thought I had.
