Chocolate Banana Ice Cream :)

Yes, this is yet another blog entry devoted to my blender. Seriously, I cannot believe I survived all these years without one!

I recently purchased, "The Carb Lover's Diet" from Health Magazine. Being a total carb addict, I wanted to see what this diet suggested in the way of consuming carbs. Their approach is that resistant starches are what keep the pounds off. The food is based a lot around bananas, as they have loads of resistant starch in them.

The recipe that intrigued me right off the bat was Banana Ice Cream, mostly because I'm ice cream obsessed and it looked like something I couldn't mess up. I modified it a little bit, so here's the recipe I used. So easy! Ready?

1 small-medium banana, peeled, sliced, and frozen
3 tablespoons of milk (I used light chocolate soy milk, hence the chocolate!)
1 tablespoon of chopped walnuts

Place banana and milk in blender. Process until think. Top with walnuts.

Makes 1 serving. Calories: 160, Fat: 6 g, Protein: 4 g, Carbohydrates: 26 g, Sugars: 15 g, Fiber 3 g, Resistant Starch: 4g (You're supposed to aim for 10 or more a day)

So. Incredibly. Delicious! Super refreshing, satisfied my chocolate craving, and gave me a dose of fruit for the day! I'm anxious to try other variations to see what I come up with. It's nice to know I can still have "ice cream" but a healthier version!
