Fast Food Frenzy!!! (Not really : )

You know even though I enjoy cooking now, I still don't like to spend a lot of time cooking!!! So..... I do a lot of "pre-cooking". On Sundays, I go grocery shopping, and then spend about 2 hours on preparing food for the week. My hubby barbeques a whole bunch of chicken tenders and petit sirloins (which I freeze in portions and label so I don't have to weigh anything during the week) and hard boil a dozen eggs for quick, satisfying breakfast or lunch food or snacks. I buy broccoli and cauliflour and cut it up and put it in the fridge in meal size portions - they steam in about 12 minutes during the week. Once every couple weeks I prepare a bunch of barley, brown rice or quinoa and freeze it in single serving portions (again to-go containers work great!)

I wash and chop up all my romaine and make my salads for lunch for the week. I bought a bunch of 3-compartment Ziploc "to-go" containers at Fry's and make my lunches for the week, which includes a different salad every day, a serving of fresh fruit and a serving of protein (usually an egg or chicken).

The chicken can be used sliced on salads, in quick stir-fry's, lunches, etc. Whole grains can be stirfried with a little soy sauce and some of your frozen steak slices or chicken. Throw in some chopped peppers and onions or other veggies and you have a really yummy stirfry in less than 5 minutes! Smaller individually frozen fish filets (tilapia, orange roughy) fry up in about 7 minutes with a little PAM and lemon-pepper for some omega 3's and variety.

So that's my secret to eating right. Not sure what others do, but I'm all about convenience and "fast" food.

I want you to know how thrilled I am that my blog made a difference for you! Sometimes I have it that "it doesn't matter" if I don't write. When I read your response, I get that it made a difference for you. One person - the most important person meant to get that message.

  Barb, I can not tell you how much this blog helped me. I was a mess before because I could not figure out how to get my meals together. I was always falling short on eating right due to failure to prepare. I wanted to eat better/healthy, but I was not preparing my meals. As a result I was spinning my wheels in quicksand. I did not get early enough to cook my morning meal and evening meals sabotaged my day because I did not want to cook daily, so I had something pseudohealthy. My turning point came when I read your post about fast food :) The Lord will send you what you need just when you need it. That particular post as well as your story truly inspired me. I finally read a success story who's life was similar to mine. In terms of age, size, and desire to change. I was encouraged!! emoticon
