1 Week as a Vegetarian - Reflections

Yesterday finished my one week experiment as a vegetarian. During this week I have also educated myself on vegetarian and vegan lifestyles to help me decide which is best for me. I have decided that I am going to aim for a "Practical Vegan" lifestyle. I will refrain from eggs and dairy in my home and when dining out. But if the choice of dinner at a restaurant is a plain salad (chilled lettuce anyone?) and adding some bread that may contain egg and dairy, I'm having the bread. If it's my Dad's bday this weekend (it is!) then I'm going to have a small slice of cake.
I don't like the way factory farming treats dairy cows and chickens but the truth is that I'm human and I'm not turning my world completely upside down. My biggest issue is not so much the treatment of animals (although that is reason enough) or my health (I'm thinking it's a little harder to eat healthy and balanced meals asa vegan) but the environment.
These animals consume so many resources and create so much waste. By giving up milk and dairy I can help in a large way. But eating an egg or two at a special occasion isn't going to send the world into a downward spiral of soylent green cruisine either.

Anyhoo - eating up my last couple boiled eggs today and the last of my kefir milk tomorrow. I still have a couple weeks of cheese left, but after that! Vegan, baby!

    I fully agree. We went Veggie for personal reasons and stayed that way for the ones you listed. I'm glad that its working out for you. Have a super week and please pass along any great recipes that you come across!

    Good for you, Carissa! I haven't had poultry, pork or beef in 14 years and I love eating that way. Lately I've been considering giving up fish and shellfish, too, considering how much overfishing is ruining our ocean ecosystems. You've inspired me to give it a try.
