It's been a while and I've been meaning to write..guess I haven't had much to write about, but today I do. Yesterday I had another check up with my internal medicine Dr. He said that according to my latest blood work, my liver enzyme count has gone down - yeah! The normal max is 40, I was at 77. I was told that I am now at 50, great news.

The downer is that he said that he wasn't sure if the drop was due to the Celiac diet or the change in my body in general. He wants to wait another 3 months and get another round of blood work taken. He said that he would like to see me in the 40 and lower range and if I don't get there, it could be something else - AutoImmune Hepetitis. It sounds like Celiacs have a tendency to get Autoimmune disorders and apparently mine could be in the liver. He wants to wait another 3 months to see the blood count before we move in that direction.

Other then that, I'm doing well. Been glutenized a few times and with my recent healing, I can very much tell when it happens. What is this peppermint tea that I've heard about that helps with the pain?

I've slowly gained a few pounds that I'm not very happy about. I track what I eat and exercise but those grains are a killer. The breads are so high in calories and carbs that I'm almost ready to forget the breads all together. However, when I go camping, the bread sure comes in handy. I'm not sure what to do...and I'm pretty sick of salads every day...*sigh*. Still working on this part of my life...

    Thanks and thanks too for reminding me about Quinoa. You've mentioned it several times and I keep telling myself I'm going to try it but I always forget. I'm going to look up some recipes for it right now...

I weighed myself today and I'm still gaining weight. I'm really disappointed in myself. My friends tell me they don't see it but I know it's there.... I love fruits but I have to cut some out because they are so high in carbs. Also, my nutritionist told me to bring more breads in but that might be part of my weight gain too. *sigh* It's tough trying to figure this out...

    After going GF in March, I think I lived on salads for a month before I started branching out and trying other things. I've found tons of recipes right here on SP that are GF...you can search for "gluten free" or "GF" and a bunch of stuff pops up. Breakfast is one of my favorite meals of the day now, and I get a lot of my "grains" in then. Some Bob's Red Mill oatmeal or mighty tasty hot cereal, honey nut Chex cereal (my newfound favorite, and a lot cheaper than most GF cereals)...yum. As far as other grains...have you tried quinoa? I've eaten some of that, some brown rice (quick cooking kind isn't bad at all), and corn tortillas. I've found that a lot of taco shells are gluten free, but watch it with the seasoning mixes, as not all are. I must say, I don't eat a lot of GF bread, although I really like the Udi's. I find alternatives to sandwiches on most days.

I'm doing a weekly cooking challenge for my friend's blog, so I'm trying out new recipes on my family each week. For the most part, they are all gluten free or I make my version gluten free. :)

It's good to hear that your liver numbers are coming down, and hopefully by the next appointment they will be in the normal range. emoticon
