Happy Wednesday Spark Buddies!
Glad you stopped by to see what's cooking in my kitchen! I wish I could say I've got all of these great meals lined up to enjoy that are quick, easy & super healthy. Well...kind of. This week is crazy in my house so we are having a lot of quick, easy & healthy meals, just probably not the greatest of meals as far as presentation goes. Some may say on the boring side, but hey, if you're looking for quick ideas maybe I can help you out.
One night we had baked tortellini with organic mushroom pasta sauce with some steamed green beans on the side.
Last night was homemade nachos or tacos. I bought pre-shredded lettuce to speed up the process, used vegetarian refried beans, chopped tomato, salsa & 1 T. light sour cream. Used some healthy tortilla chips for dipping! For my side I squeezed in a cup of grapes! (I was running low on my fruits/veggies count for the day)
Tonight I think will be the best meal of the week, Grilled Lemon-Garlic Shrimp Kabobs! I love shrimp, garlic, & lemon!!! This is a new meal for us to try. So we'll see if it lives up to the expectations I have for it. It may just make its way into our meal rotation, plus I've never made anything with raw shrimp, so we'll see!
For the rest of the week, we have on line up~
breakfast for dinner ~ egg white omelet night packed full of veggies!
Quesadillas with a steamed veggie on the side
Grilled Salmon with herbs and a baked potato....(this meal is a hit in our house-the kids love it!)
