More fruit is easy... the veggies and I are playing hide and seek

Sunday, July 11, 2010

Our guests needed the upstairs fridge so I moved most of the veggies to the downstairs fridge. Right away I noticed veggies missing from our meals. No one is interested in going in search of them! The guests will be gone this afternoon so it occurred to me that maybe I should move all the bread and condiments downstairs. Do you think it could work? lol We will feast on salad tonight with fresh corn. Oh thank goodness the heat wave is taking a 2 day break. The A/C repair was cancelled because of the thunder storm (they don't risk getting electricuted if there is a power surge.. hmmm) and is rebooked for Tuesday. Thankfully my very brilliant hubby took apart a dehumidifyer and rigged it up in the guest room so our guest (pregnant and disabled) could have some heat relief at night). Tonight is supposed to go down to the mid teens so I plan to do some towels. Sheets and clothes on the line outside I love but crusty towels? Not so much.

I'm not a veggie lover myself, but to get my 5-6 servings in a day I make a large bowl of 5 cups of romaine lettuce and eat that plain with just my dressing mix or put in some cucumbers, celery, shredded carrots and red sweet peppers and that is very filling and I got all my veggie portions in for the day out of the way all at one time. Just find what veggies you do like and maybe chop them real fine and mix/hide it into your other foods like soups or chili or whatever.
