Father's Day 2010 Is a Wrap!

I started my day out pretty rough. I woke up at 8 a.m. to one of the dogs getting excited in his crate. I got out of bed and felt my head throbbing. I forgot to take my allergy medicine before bed again. I let the dog out of the crate and realized hubby and the twins were already home from camping. There went my goal of having the house all clean before they got home. It upset me and being a little more hormonal than normal, I cried. Hubby said he didn't need a clean house to enjoy Father's day. He is such a great guy. I eventually ate something and took one Excedrin to get my head better.

Around noon I went outside to check on my flowering bulbs. The ewe had ate all of them except one bunch in a ravine in my side yard. (Note: I have 2.25 acres). I walked around the property noted all the flowers blooming especially the wild crocus which seem to be more plentiful than ever. I am guessing all the moisture this year has made the difference. It is so green here right now. As I was wandering around the property I noticed that I was being stalked. Stalked by my horses, they had been out loose on the property since yesterday morning and were getting bored I guess. So I went into the barn and got their halters and leads. I haltered them and led them to the front gate. I let me and the horses out and shut the gate quickly as the ewe was following. Once outside my property, I let them graze on the tall grasses along my drive for 1/2 hour. I got to work on my tan at the same time, lol.

Later, I went inside and started cooking for the week. I roasted asparagus, sauteed green beans, and grilled my chicken. At the same time, I made a chicken fried chicken breast just for hubby. I breaded it with dried breadcrumbs, cumin, onion and garlic powder, tarragon and margoram. I surprised him with this and some of my roasted asparagus. He said my chicken was the moistest (not sure if this is a real word) he had eaten in a long time. (note, he does most of the cooking for him and the boys since I am on a special diet). I bagged up the food and froze them in individual baggies. Me and son, Matthew, made everyone Chocolate Tofu Delight which was too dark chocolately and not sweet enough for the boys so hubby and I ate most of it. It was delicious. I have added this recipe to my cookbook and it is shared with everyone on here. I then watched some golf and NASCAR with hubby and read some of my magazines.

In the evening, I made homemade whole wheat pita bread from a recipe in Cooking Light, mixing the dough and letting it rise in my bread machine. I had a large salad with spinach, spring mix, shredded carrots and red cabbage and 3 oz of grilled chicken breast with 10 sprays of Wishbone Italian Spritzer. I shaped the dough and baked them. Then, cut them in half. I have enough for 13 days of 1/2 pitas. I plan on eating them with 3 oz grilled chicken and 1 T of mango peach salsa.

It poured rain and hail from 3 p.m. until 7 p.m. I got a hike/run in around 8 p.m. Now, at 9 p.m. it is pouring rain again. Crazy Montana weather!

All in all, a good day! Hubby was happy. I got alot done on my to do list and I ate fairly good, a little more carbs than I have been eating but still not excessive and all good carbs! I got in one session of cardio too. Tomorrow it will be weight training and hopefully at least two sessions of cardio. Also, progress pics and hopefully measurements.BTW, the scale dropped two pounds today too! WooHoo!
