baking some tilapia right now!

I've always grilled it. I guess I had never thought about baking, but it had directions on the package. I think I will like this better - I don't have to baby-sit it! Also, won't lose the seasoning as much as when I'm constantly flipping it.

Also, zero-calorie drinks are SERIOUSLY saving my life! lol. I am trying to drink water too (could definitely drink more!) but diet soda and sugar-free koolaid is really helping curb my sweet tooth!

    I've developed an appreciation for crystal light. Their raspberry flavor is perfect to make a big pitcher and then pour it over ice. I've gotten so that I'm used to flavoring my water instead of watering down my drinks... meaning I'll start with a glass of ice water and add a dash of something. Regular juice tastes way too strong for me now, and I just know how many calories are in it... but adding a little to start.. and then switching to crystal light when I was ready, made drinking water fun.

As for talapia - my husband and I use an excellent recipe for it that we broil in the oven. The recipe was for salmon, but it works perfectly on talapia. We've made it with less sugar and without the orange peels when we didn't have any oranges, and the seasonings (chili powder and brown sugar) still make it incredible. I'm not even a huge fan of spicy, I didn't realize chili powder was more of a flavor than hot spice. Give it a whirl!

    Baked fish is cool, I just don't love Tilapia, it has so many bones. My favorite is Red Snapper, followed by Rainbow Trout, Bass, Flounder, Shark, (A poor person's Swordfish), and Tuna.
