This is quick and easy. The cake is somewhat dense, but it is tasty for a snack. This morning, it's what's for breakfast.
Spice Cake in a Mug
2 TBS Whole Wheat Flour
2 TBS raw, whole oats
1/8 tsp Baking Powder
3 TBS Stevia or other sweetener
1 1/2 TBS Cinnamon
1/2 TBS Nutmeg
2 TBS egg whites
3 TBS Skim Milk or water
2 TBS Canned Pumpkin (original recipe calls for applesauce)
Splash of pure vanilla (optional)
Add dry ingredients to mug and mix. Add egg whites and mix, then add milk and applesauce (this is just a replacement for oil, I wanted a pumpkin taste this morning so I used that). Place mug in microwave for about 3 minutes until it rises.
After cake cools you can mix 2 TBS fat free cream cheese with 1 TBS Stevia to make an icing.
Cake with icing has about 250 calories.
