Happy May Day! It is a brand new month. The best month of all, considering it has my birthday in it. =) I hope you all had a fabulous Saturday!
As I have mentioned before I have been having it pretty rough the last few days. Probably wouldn’t be as stressful to some, but it has been more than I can handle! Thank goodness I have an amazing God who can handle much, MUCH more than I can.
I have been giving in to more emotional eating. Old habits die hard! Even ones I haven’t had for quite some time. But I’m tired of it! So instead of giving in to unclean, unhealthy ice cream, I have made up a few batches of some awesome fruity “ice cream” inspired by Coach Stepfanie and her banana “soft-serve.” I wrote about her recipe before here:

And I have to tell you, it’s pretty darn tasty.
While the banana soft-serve is good on its own, I knew I could take it to another place by throwing some other fruits. Whether I wanted to add frozen strawberries,
peaches,
or grapes,
to the frozen banana, I could enjoy some extra fruity goodness!
What do you do with all of this frozen fruit? You blend it until smooth, which involves pulsing, and pulsing…oh yeah and it’s going to take a lot more pulsing until you achieve this:
You can then enjoy a serving out of a small dish like this:

Or you can eat the whole batch out of a big bowl like this:
You can even stir in some greek yogurt like this:
Any way you have it you are going to want more! You can make multiple batches of them at once and have your freezer look like this:
Yup! They slide right in there next to the Ezekiel bread and pistachios. Just move over your frozen veggies and you can enjoy many servings of “ice cream” throughout the week.
