Yesterday was a great day!! :o) After working I went and picked up the kids from school and my sons little girlfriend. LoL After I got home I started in on making my tomato fennel soup (Finally) :o) The kids played while I cooked this time. Then about 6 my sons friend was picked up. I also made grilled cheese to go with the soup and cut up some strawberries and banana's. We sat down to eat at about 7 I think. I have posted a picture blog of my soup making at the bottom. soup-3645 I ended up adding more garlic and I put in some carrots. The carrots were great read below about the garlic. LoL

So as far as the soup goes I really need to remember that I can't add extra garlic to any soups. A little goes a loooong way. It wasn't too bad but for sure too much. When I cook I typically don't use and salt and I try to buy salt free stuff if I use anything from a can. This one I used canned whole pealed tomatoes with no salt added and the rest was fresh ingredients. With most things I let everyone add their own salt to taste. This soup though needed some more flavor, I ended up putting way more salt than I do normally, but other than the garlic and salt it was pretty good. My daughter even had seconds :o) And she saw all the veggies before I blended it.

This week I have done well with my food and tracking. I also have had one of my salads that I prepped Sunday each day and leftovers from the other meals I made. Today I had some leftover tomato fennel soup and I added some croutons on top, yummy. Next time I make it I am going to put a small dollop of sour cream on top, a couple croutons, a dash of parsley, and a little bit of fresh grated Parmesan. I think I am really getting pumped on the cooking and my family is very supportive :o)

Two more days till we leave for Vegas. I'm excited :o) It will be a great time I'm sure. I'm planning on getting strength training in tonight and my Ifit live workout on the incline trainer. I'm not allowed to take any pics at work. Well I'm back to my yummy salad, finished my sw quinoa a little while ago (It really helped fill me up so I didn't feel starved) Hugz to all. Smile ; )
