Today I read the page in The Spark book about adding more veggies to meals. So for dinner I started with raw broccoli flowerettes, onions, red, green and yellow peppers in a skillet with a little canola oil. I added about a half cup of cooked penne pasta, cut up a slice of deli turkey and threw in a handful of frozen peas. Hmm. It still needed something to tie it all together. Not pasta sauce, but how about this can of diced tomatoes with mild chili peppers? Three or four tablespoons should do it, and maybe two tablespoons of shredded cheddar. Perfect! Colorful! And - Wow! Spicey! I thought the can said MILD chilies? Well, I didn't have any problem getting 8 cups of water today!
