Don't know if any of you have tried this but I subscribe to and each day I get wonderful recipes.

Anyway, with all the rich New Orleans food, I go to exta effort to make healthy, low cal meals when I cook dinner.

Last night we had roasted cabbage.
Heat oven to 450', line pan with foil and spray with Pam.
Cut head of cabbage into 8 or more wedges and place in pan (leave core on or the wedges will fall apart).
Mix 2 Tbsp olive oil and 2 Tbsp lemon juice together and brush on cabbage. I did not need all that mix. Sprinkle with pepper and salt ( I omitted the salt)

Bake about 30 min on one side. Turn over (bottom will be roasted, too) and drizzle more oil mix on and continue to roast until done the way you like it.

I could have eaten the entire head of cabbage myself .... it was THAT GOOD !!!

I made broiled cat fish and a large garden salad with everthing in it.

I have roasted eggplant, peppers, cauliflower, broc, carrots, onions, mushrooms, zucchini, summer squash, butternut etc but the cabbage was a new one. Oh, my !!
