Pumpkin Pie Oatmeal

The funniest thing happened after I talked about not wanting pumpkin pie oatmeal for awhile. All I could think about this morning was eating some pumpkin pie oatmeal!! So I took some pictures of the process.

The first thing I wanted was some banana yogurt. I took some fat free greek yogurt (Chobani, of course) and blended it up with an ounce of banana, some vanilla and some stevia.

Then I put that in the fridge to thicken up a bit while I finished the rest of my meal. For the oatmeal topping I use:

1/4 cup 100% pure pumpkin
1 teaspoon cinnamon
1 packet of Stevia
1 tablespoon ground flaxseed



I blend that up to a nice and smooth consistency with 1/2 cup of water.



I add it to 1/2 cup of oats and microwave for two and a half minutes.



I then give it a stir and add a couple of extra tablespoons of water before microwaving for another two and a half minutes. Then I let it sit in the microwave to thicken while I get the rest of the meal ready.

For my sides I grab my banana yogurt, and about fifty calories worth of sliced almonds. If you like things mixed together add it all to the oatmeal bowl. You have the perfect whipped topping (yogurt), filling (pumpkin oatmeal) and crust (almonds). I keep all of mine separate.



I take a bite of yogurt, a bite of oatmeal and then I eat a few sliced almonds. And that’s what I call “Pumpkin Pie” oatmeal! I just finished my meal and now I feel full and satisfied.

    For anyone curious about the calories :

For everything (almonds, yogurt, and oatmeal with toppings) about 420 calories, 53 grams of carbs, 11 grams of fat, and 29 grams of protein! A million grams of YUM! =)

    Since pumpkin pie is my favorite, this is a must try for me. You are so creative. Thanks for your menu blogs with all the pictures.

I also think your idea about the ability to take bites from three different things is an outstanding way to trick your brain.
