Learning something new everyday is a good thing. It can also be a healthy thing. I just read the article "Eggs are Egg-cellent Healthy or Not? We Crack the Case!"

Whoa, I have still been hanging on to the apparently old myth that the cholesterol in eggs should be avoided, hence I basically avoid eating yolks (except in baked goods, etc). I did not know how healthy an egg is (everything in moderation). Well guess what we are going to have for dinner tonight? A veggie omelet. I can throw in whatever I have on hand. I will brown some onions, red bell pepper, maybe open a small can of mushrooms, I have frozen corn that I can thaw and use. Season with salt and pepper. Crack a few eggs, whip them up and into the frying pan after a few minutes, add the veggies, fold and flip, sprinkle with chopped cilantro, whola. I have some avocado salsa which I made a couple of days ago to serve on the side. The salsa will spice it up nicely for us.
This blogging is making me hungry. Time for breakfast, which will be oatmeal
