Yesterday, I did something that I have rarely done lately. I did not feel like cooking dinner and I had the leftovers that I still had in the fridge for lunch (yeah, I know, but you know what I mean). So I ate exactly what I felt like. 10 stalks of celery with peanut butter (5 tablespoons), soy milk heated up with hershey's syrup. I had a healthy lunch - my home made vegetable soup, homemade pinto beans and homemade bread (am I a domestic goddess or what :-). Breakfast had been the bread toasted. Anyway, not feeling like cooking what I had on hand (the refrigerator is getting quite bare - celery, carrots, fresh oregano and cabbage) I decided to eat it RAW! RAW is easy. Peanut butter is almost always here because it is not normally one of my favorites. But celery and peanut butter for dinner with hot soy milk with Hershey's syrup. And where did I end up nutritionally? My best day ever!!! Perfectly in my target range on every indicator I track except I was over on fiber (almost every day) and on B12 (where I am perpetually low). I am thrilled! Thrilled I tell you! I met my goals on calories, protein, carbs, fats (another perpetually low spot) - what a day! WooHoo for me!
