Vegetarian!

okay I have really jumped back into the seat of being a 100% vegetarian, this word doesn't mean I do not eat meat. just means I am making my life more fruits and veggie orientated. I have changed my mayo to Vegannaise, all my foods will have more veggies than meat or bad foods. I have kicked all processed foods. I do not eat fast food, unless its something I can handle what I eat myself and see it is actual food. I do not eat fried foods. I drink water and green tea daily, to detox all unpleasant left over bad food from my body. I do not want to loose weight that way but have been, nothing drastic. but enough to notice the change. I will start eating things from Kashi, and organic providers, like Boca and MorningStar. I will also be finding recipes and such. so if you have anything to offer please email or comment them to me :D! I am so excited for this new step in my life and oh it all to you who have pushed me to succeed! thank you all and sparkpeople! I am saying this all so I can make it a pledge and see this and motivate myself to do something good for me. I am just nervous about getting that droopy skin syndrome when I loose my weight. is there things I can do to tighten it as I go on? thanks so much!

    I'm a flexatarian. I still eat meat, but not large amounts of it and usually only at one meal a day. Ideally I'd like to cut back to meat 3-4 times a week. But I wanted to share my zucchini pancake recipe with you. 2 Cups shredded zucchini, 2 egg whites (or 1 whole egg) 1/3 cup of Bisquick (I use heart smart) and 1/4 tsp garlic salt (but really use any combination of spices you like) beat the egg, bisquick & spice together, stir in zucchini and fry on pam coated griddle just like regular pancakes. I use 1/3 cup meassure to scoop the batter with and usually get anywhere from 5-7 pancakes. Then while they are still hot, I put a little lite cream cheese on top, let it melt and then some salsa for kick! I can usually eat 3 for lunch. They are filling and about 50 Calories each!!

    Loosing slowly should help with the droopy skin problem. I have lost over 30lbs. in the last year, but so SLOW that I have NO droopy skin....After reading this blog while watching Oprah, I am wondering if YOU watched it too! These are the exact things they talked of....though NOT a vegetarian diet, but to eat food your GREAT Grandma would RECOGNIZE AS FOOD! WOW!

  Congrats! I've been a vegetarian for 2 years, and as long as you do it right, it's definately a healthy lifestyle!
