30 Days, 30 Salads: Day 1

Salad: Yum Woonsen (Thai rice noodle salad)
Calories: Approx. 500

Verdict: Alright. Alright. As salads go this was definitely not what I was referring to as "vegetastic." It was pretty tasty though, and while a few recipes online clocked it at around 500 calories it certainly seemed a lot lighter than that. The noodles were tasty and non-greasy (they don't stir-fry these), and there weren't all that many pieces of chicken or peanuts. The veggies were mostly green bean slivers, some carrot strings (more to impart a festive air than anything else) and a boatload of onions (which is really saying something since I am the onion queen). Oh an hot pepper. Always the hot pepper.

Really, since jumping back into "health" mode food-wise left me a bit shaken and trembly (and by "me" i mean, "my intestines"), I needed to offset the Fiber One bars, green tea, and fruit with something more, shall we say, comforting? And I don't know about you my little potato dumplings, but I spell "comfort," C-A-R-B-S. So, some rice threads in my salad seemed like a decent compromise. All in all, an auspicious start to my 30 Days, 30 Salads challenge.

Tomorrow...I try my hand at a cheap-eats staple...
