Two Week Challenge; Friday results

I took the batteries out of my scale; so no more weighing in until the end of the year.
I made a GIANT batch of eggplant rolatini on Thursday and have been eating that for most of my meals. It's really pretty good on the carb front, but it has a lot of salt, so I am feeling pretty bloated and water weighty.
I STILL have those damn chocolate cookies in the house. I am going to give them to my neighbors I think, they are right across the hall and british, so they probably eat stuff like that, right?!
I FINALLY made it to the gym last night and kicked A$$ on the elliptical. I had fun, sweated it out, and the 45 mins flew by. I am hoping to get another session in today, but I have holiday shopping and SO many errands to do, so we'll see...

As far as yesterday, here's how I did on my challenge!
Friday!!!!
Breakfast
1 slice julian's bread (13 g fiber-1 net carb)
1 slice of TJ black forest ham
1 large egg fried
1 slice of swiss cheese
large iced coffe w 5 shots of sf vanilla 3 tbs half and half

Lunch
4 eggplant rollatinis
1 cup spinach

Snack
1 thin mint cookie about 5 g carbs (eeks!)
1 low carb smoothie w/ whey protein from gym

Dinner
4 eggplant rollatinis
celery and cheddar pub cheese


Workout
740 cals; 45 mins on elliptical

    Those thin mint cookies are certainly giving you problems. LOL. I have a canister full of candy to tempt me.
