Why didn't I just make it from scratch?

Tonight we had a tight turn around between activities because of a special Christmas movie night at the school. So I decided to pick up frozen pizza for dinner. For myself (and my husband) I picked up the store brand healthy choice pizza -- I was really disappointed with the pizza.

So why didn't I plan ahead and make it myself... well today I was tired and didn't really feel like cooking or dealing with rolling out dough... plus I really need to figure a better way to roll out the dough so I can have thin crust pizza.

Next time, if I don't have time/energy to make a pizza, I will have a salad - it'll be much more satisfying!

    If I'm craving a really thin crust pizza, I'll make a crust out of rice flour instead of wheat flour. Brown rice flour works great, and it has a nice flavor (and you can add onion or garlic powder and some italian seasonings straight to the crust). It's kind of runny, so there's nothing to roll out.

Here is the recipe that I use, but instead of potato starch, I use corn starch, and instead of potato flour, I use buckwheat flour.

This crust is gluten free and dairy free as well.

    Thanks for the suggestions... The pizza had flavour but just not the traditional flavours... the tomato sauce was nearly missing (my guess it has too much sodium to be on their pizza....). The mushrooms and garlic were great - and the crust might as well have been cardboard with the flavour it had.

Guess I learned.... I'll use a tortilla next time.

    Live and Learn! Some of those healthy choice meals are bland. Love the lean cuisine ones though!

    Large tortillas can also work. For emergencies, take bread slices and roll them thin. That's if you have a craving for pizza flavors, and a salad doesn't seem satisfying.

    If you're stuck for a thin crust try using a multigrain wrap- they work well and are really crisp. Salad is good....MJ

    I like to make my own dough and then the complete pizza. Instead of baking it, I just wrap it up and pop it in the freezer until I need it.

    When I was back in college, I loved my quickie pizza's. I bought Jiffy pizza crust, those cheap little boxes. I'd top them with sauce, sometime cheese, sometimes not, and all the veggies I could pile on it.

Lean Cuisines are my favorite store-bought pizza. Last time, I put pineapple on their bbq chicken. Yummy combination!

Of course, I LOVE salads, too! emoticon
