
Happy Saturday dear Sparkie friends! I think I still should be sleeping...I didn't get to bed until really LATE last night. Some other friends of ours are down here for the winter months now and we decided to meet up with them last night. This particular couple are so much fun...but we tend to stay out with them WAY too late and I'm paying for it today! I woke up and couldn't go back to sleep knowing that I had to get up within another 45 minutes anyway...you know how that goes!
I'm printing up some more business cards for the market so I'll just get this blog started and then I'll have to come back to it and finish it later on today, tonight, or maybe even tommorrow morning.
This is the MOST beautiful time of the year here in Florida...it is finally cool in the morning, perfect mid to high 70's in the afternoon, then cool again in the evening. It's weather like this that reminded me why we moved to Florida in the first place. We've been here since 1979 so we claim 'squatter's rights' by now!
Here's those RAW Apple Oatmeal Raisin Cookies I promised....I can tell you right now they aren't AS good as the RAW chocolate chip cookies I posted some time back...but they are sure a heck of a lot quicker to make...so when I eat them...I take that into consideration...it makes them taste pretty yummy when I think about the time factor..and the fact that they are HEALTHY for you!
Makes about 25 ~ 2" cookies
2 c oats (not instant)
1 large Fuji apple, chopped
1 c agave
3/4 c raisins
1/2t cinnamon
1/2 t nutmeg to taste
Walnuts I added about 1/4 c because I love them and they are healthy for you!
Pulverize oats in food processor then place in a bowl adding cinnamon, nutmeg and nuts
Put chooped apple and agave in food processor and blend. Stir into dried ingred. and add raisins. Drop by Tablespoon onto teflex sheet (or parchment paper) and dehydrate @ 115 degrees for 8 hours.
As you know I don't have a dehydrator so I use my oven on it's lowest setting mine goes to 170 degrees and I leave the door open...I put the cookies in and set the timer in 1 hour segments...I usually just let them go until they are very firm...I turned them over about half way through the process so that they got firm on both sides.
This part of the process is the longest and to me the biggest pain...I always want things done instantly...and unfortunately RAW food demands you to push your 'patience button'...probably a good life lesson for me anyhow!
