Ok so a while back I blogged about starting to eat a mainly vegetarian or vegan diet. I've been researching for a couple of months before taking the plung, so to speak. But last Friday my sweet Jordon child approached me and said "Mom, I'm going to do the vegetarian thing again" (she's done it three times before for a couple months and then it's back to regular meat and junk food). I was like "GREAT!" and thinking "this gives me motivation to get a move on with the eating changes!" I discovered a name for the type of eating we are doing. It's LONG! LOL A Moderate Ova-Lacto-Vegetarian. This means we still enjoy eggs and dairy products and on the occasion will still eat actual meat. Like once every week or two so that our bodies don't freak out and get sick when we do eat meat. So I went shopping. I discovered some really really good stuff!

Morning Star Prime Griller veggie burgers: OMG these are amazing! I don't feel like I'm missing out of real hamburgers at all. I actually kind of prefer these as they aren't greasy!

Morning Star Breakfast Sausage: again OMG! These are so good!

I bought lots of Amy's brand Vegan and Vegetarian meals to try. I'm loving the Bean and Rice Burritos! YUMMO!

I got something called Veggie Slices. My sweet Kim introduced me to these as a replacement for processed sliced cheese that isn't very good anyway. These things are the BOMB! I got the Cheddar ones first. They melt beautifully and taste amazingly like cheddar!! We put them on our Grillers or make grilled cheese with them and they are wonderful! Today I got Cheddar Jalapeno to try on my lunch burger and it was to die for! I also got some Veggie Shreds to try on my Amy's Vegetarian Black Bean Chili.

Thursday night: The Amy's Vegetarian Black Bean Chili is so incredibly good! I never in a million years would have guessed it! I thought it'd be kind of bland and yucky. But nope! Very tasty, great texture, and a hint of spiciness! I used it like I would any other chili. This time I used it to make a quick Frito Pie. So Fritos, Amy's Black Bean Chili, and Veggie Shreds. It was delicious and filling!

I'm trying to think of something to cook with meat in it for this week. And now I kind of don't want to. Maybe I'll wait till next week to do the meat thing! LOL

Tonight Veggie DeLite Pizza from Papa Murphy's, add black olives and feta. Tomorrow night, SP recipe for Spinach Ziti. And Sunday night, SP recipe for Vegetarian Stroganoff.

I think I'll try to post about each new thing I try, whether vegetarian or not.

I have given up trying to use the food tracker on here. Most of the things I eat are never on there. Many times I have found the nutritional information on the recipes to be inaccurate also. And many times I am just clueless about serving sizes and all that. So I've decided, instead, to consciously eat slowly and to listen to my body for cues on fullness. With the added element of learning to guage portion size by the visual sizes that SP teaches. Like piece of meat being the size of a deck of cards and so on. LOL Funny I use the meat example as the only one I can remember off the top of my head! LOL And I'm going to try to at least write down what I eat and drink. If nothing else it will help me see the quality, and hopefully most of the quantity, of what I eat.

Anyway... how is everyone else doing?
