Okay so we have been eating a lot of chicken lately...and getting tired of it so I thought how about some ground turkey...but I was hesitant...I was like can I find a good recipe..will we like it....or will it be dry and tasteless. Well, I found a recipe for Mini Chipotle Turkey Meat Loaves. Let me tell you they were out of this world, Awesome!!!
So I will share:
1 small onion-coarsely chopped
1 medium carrot-coarsely chopped
1 stalk celery-coarsely chopped
2 chipotle peppers (canned in adobo sauce)
1 package of extra lean ground turkey breast
1/2 cup quick cook oats
2 egg whites
Sauce:
1/4 cup ketchup
1 tbsp chipotle pepper sauce (from the canned peppers used in meatloaf)
1 tbsp brown sugar
Preheat oven 350. In a food processor, add onion, carrot, and celery. Pulse until finely chopped. Add chipotle peppers and pulse until combined. In a large bowl, combine turkey and carrot pepper mix. Add egg whites and oats, gently mix. Place about 1/3 cup in of prepared mix into 9 wells of a muffin tin sprayed with nonstick cooking spray. Bake for 20 minutes.
Meanwhile, combine ketchup, adobo sauce, and sugar, set aside. Remove meat loaves from oven and spoon topping over each meat loaf. Return to oven 5-10 minutes. Let stand for 5 minutes before serving.
For each mini loaf
110 calories
1 g fat
165 mg sodium
8.5 g carbs
1.2 g fiber
2.2 g sugar
17.3 g protein
These are great and let me warn they are SPICY! but really good. We love spicy.
