It's been a while since I posted a food blog, but here is yesterday's dinner:
The tacos were made on homemade tortillas and filled with grilled chicken that had been marinated in a spicy adobo marinade. They're topped with grilled red onions, a few chopped tomatoes, an avocado-lime sauce, and 1/2 ounce of queso fresco (divided among all three tacos). I made the sauce with some mashed avocado, a little lime juice, a bit of minced cilantro, garlic, and water to consistency.
The entire plate of three tacos was under 340 calories and soooo good. As usual, I rounded the meal with a giant tossed salad. These are definitely making our regular dinner rotation!
