Eggs A Plenty

So...
My egg concoction is working great.

8 medium brown eggs with Omega 3
2 Green Peppers
2 Red Peppers
4 Roma Tomatoes
4 cups of fresh spinach

Cooked all the veggies up first, added the eggs, popped in the oven to ensure everything cooked and parted it in to 4 equal amounts. It's more veggies in a day than I ever get heh.

And alot more filling than the good old Special K.

So I think each week I will buy different veggies and make something similar to get my veggies in.

Next week's goal Healthy Lunch, eek!

    I make similar concoction, but with lotsa garlic and on the stovetop ... I bet it's better baked! thanks for the idea.

    sounds yummy! We have this often, and call it "garden scramble". Only with egg whites instead of eggs. Enjoy!
