Healthy Meat Loaf
3/4 lbs. ground turkey breast
3/4 lbs. extra-lean ground beef
1 large onion, finely chopped (1 cup)
1/2 cup soft bread crumbs
2 tablespoons ketchup or tomato puree
2 tablespoons Dijon mustard
1/2 tsp. salt
1/4 cup fat-free cholesterol-free egg product or 2 egg whites
2 cloves garlic, finely chopped
Heat oven to 375 degrees. Spray loaf pan, 8-1/2x4-1/2x2-1/2 inches, with cooking spray. Mix all ingredients. Spread in pan. Bake uncovered about1 hour or until no longer pink in center and juice is clear (meat thermometer should reach at least 160 degrees.) Drain immediately.
