Veggie Police

I had a great worjout yesterday and so far I am please with that. My struggle is more with what I eat than anything. How do you get all your veggies in? I don't care much for fruit but I do try to have some a few times a week. Salads are a given for lunch and perhaps as a side dish for dinner. SparkPeople how do you get your veggies in???? emoticon

    Sautee some bell peppers and sweet onions with extra virgin olive oil and black pepper. Add them to some pre-fab minute rice (brown)
