For some reason, I can convince myself 'certain healthy and good for me foods taste great' or make it taste good so, it is palatable! It's embedded in my brain (perhaps a chip inserted somewhere unknown to me).
For example, I was a vegetarian all my life, except for a few years, when I first came to the US as a 19 yr old, listened to others and lived like a Roman in Rome. I did eat a couple of non-vegetarian items although, could not eat fish !
A couple of years ago, when I was told by the doctor to eat beef, I adamantly refused. It's totally against my principles, having been fed cow's milk as an infant, to me it's decieving my own mother, the cow who nursed me. I will not do what defy's my conscience!
Being an animal lover, living in a country of abundance, I felt there was no need to eat meat which is what prompted me to be a vegetarian once again in 1983! However, when the doctors advised in 2005, all my friends (including vegetarians) persuaded me saying 'think of it as a medicine and eat it!'. It was not easy - the worst day was after watching the movie, Babe. Slowly with great difficulty cooked ground chicken, turkey (that my DH handles - I dare not touch, if I have to, use gloves), drenching it in spices and other stuff, to disguise the meaty taste. Fish is totally gross with its awful smell and fishy taste....but still, learnt to eat mild ones like Tilapia, trout, etc. This has surely helped me bring my triglycerides down quite a bit that even meds could not, for the last 20+ years and raised my cholesterol to a healthy number.
When I was diagnosed with diabetes in 2007, my MD doctor, with alternate medicine experience from China told me one biller melon a day would cure me, I went for it. One bitter melon would juice into 2 ozs and I would gulp it down first thing in the morning and be done with it for the day. There were days when I did prepare the bitter melon to enjoy it and not for medical reasons. Due to this blessing of adaptability perhaps, I was able to kick diabetes out of my life with normal A1C levels since early last year, not needing to drink the bitter juice any more. I'm even able to eat loads of carbs daily without any adverse effects all because I make sure to eat ample fiber!
