We have foods that seem to only be available during Carnival. My personal fave is shrimp roti, which is Trinidadian, or maybe Indian in origin. Roti is an Indian flatbread, something like a double-layer pita bread with garbanzo bean meal between the layers. Roti here contains curried potatoes, peas, and usually meat or chicken or shrimp. My personal fave is shrimp. A bit hot, definitely spicy - not quite curry, more like cumin and pepper and some other savory items in there.
And somewhat messy - I usually go through 3 or 4 napkins per roti!
I had my first roti of the season last night - hoping for at least one or two more this Carnival. The booth has a slogan based on the Carnival theme: "Echoes through time, with roti in mind!"
