I've taken to freezing individual portions of my meals for use later. I know this week is going to be a busy one so it's a great time to get them out and enjoy.
2 portions of the chickpea broccoli casserole
2 portions of a faux chicken stew
2 cups of tomato soup
1 portion of spinach noodle casserole
woo! This gives me flexibility if I want to make something else mid-week (and opens up some storage containers!).
