Lower Fat Pesto Sauce

I tried to enter this as a spark recipe but it was too tiresome a project. They only have basil measured in Tbs, # of leaves, or grams.

4 c. Fresh Basil Leaves
4 c. Fresh Spinach Leaves
2 T. fresh lemon juice
4 cloves garlic
1 c. pine nuts
1 1/2 c. shredded Parmesean Cheese
1/2 c. olive oil
3/4 c. fat free half & half

Toss all ingredients into a food processor or blender and process until smooth. Serve tossed with pasta, as a sandwich spread, or over grilled meats, fish, or chicken.

    Hey I just saw this blog and had to share what I do.
I don't eat the regular pesto because the flavors are a bit strong for me but I buy packaged pesto like Knorr and I only add about 3/4 cup of water and no oil and it gives a nice smooth texture and great flavor.
I use it for my oven roasted tomato pizza on eggplant or zucchini instead of bread.
Yum. Just made it yesterday again.
Anyway one more way to reduce the fat.
