Black Bean Breakfast YUMMY!

This is great to batch cook ahead of time. The recipe is just made up of things I like (black beands) and things I need to eat (eggs) but don't like...
Scramble 6 eggs with some Pam spray
then seperate equally into three bowls
sprinkle some cheese on top of each (whatever kind you use, however much you want)
pour a can of black beans into the same pan you scrambled your eggs in and bring them to a boil, the liquid will thicken a bit.
stir ALOT or they will stick/burn to the pan
seperate the cooked beans on top of the three bowls equally.
Add a LARGE tablespoon or as much as you like of Salsa on top of each bowl.
I buy the all natural no added sugar or salt just veggies in it Salsa. You have to read the labels... The one I use is a local brand called "Old San Antonio" or something like that "San Antonio Riverwalk" I don't remember the name... but it's at our Walmarts...
I put lids on the two extra bowls or Saran Wrap and then just rewarm them for 2 minutes on high. they do rewarm well, the eggs are fine and everything. I don't usually stir them around til I'm about to eat it and then it does look kinda yucky... but TASTES SO GOOD!!
This is three days of breakfasts and I promise you it is VERY VERY filling!! I drink some V8 with it and Walla, well rounded.
Try it. I HATE HATE scrambled eggs, yuck! But I can eat this!
